Ingredients

  • FOR THE APPLES:
  • 4 cups Peeled, Chopped Apples
  • ½ teaspoons Cinnamon
  • 1 Tablespoon Unsalted Butter (optional)
  • 1 teaspoon Brown Sugar (optional)
  • FOR THE PORK CHOPS:
  • 4 whole Pork Chops (boneless Or Bone-in)
  • Olive Oil, As Needed
  • Salt And Pepper
  • 2 teaspoons Mustard (1/2 Teaspoon Per Pork Chop)
  • 4 teaspoons Brown Sugar (1 Teaspoon Per Pork Chop)
  • ½ teaspoons Cinnamon (1/8 Teaspoon Per Pork Chop)
  • ½ teaspoons Basil (1/8 Teaspoon Per Pork Chop)

Preparation

Preheat oven to 400ºF. In an oven safe dish, toss together apples, cinnamon, butter and brown sugar (if using) and place the dish in the oven.

Rub pork chops with a bit of olive oil and season them with salt and pepper (both sides). Over medium heat, in an oven safe skillet, sear one side of the pork chops for 1–2 minutes until lightly browned. Flip the pork chops over and sear the other side for about 1 minute and then turn off the heat.

On each pork chop, spread mustard and brown sugar, using the back of a spoon to coat the chop. Sprinkle on cinnamon and basil, using the spoon again to spread it evenly. Place the skillet in the oven and bake for 10–15 minutes, or until pork chops reach an internal temperature of 145ºF when tested in the thickest part of the meat. Let rest for 5 minutes before serving with the baked apples (they should be done about the same time as the pork).
