  • 1 cup flour
  • 1/2 cup semolina
  • 2 boiled potatoes
  • 1 inch piece of ginger
  • 2-3 green chillies
  • 1 tbsp finely chopped coriander leaves
  • 1/4 tsp asafoetida
  • 1/2 tsp salt
  • 1/4 tsp cumin seeds
  • 1/4 tsp red chilli powder
  • 1 / 4 tsp turmeric
  • 1/4 tsp fennel
  • 1/4 tsp celery
  • 1/4 tsp chili flakes
  • 2 tsp desi ghee puris
  • oil frying pan

    1. Peel the potatoes and grate the ginger first. Coriander leaves and green chilies, finely chopped, should be kept separate. Now finely grate the potatoes.
    2. Mash the grated potatoes with semolina, flour, tsp asafoetida, salt, cumin, red chili powder, turmeric, fennel, ajwain chili flakes, ginger, green chili, coriander, and 2 teaspoons desi ghee until well combined. Combine thoroughly.
    3. Make a hard dough by mixing thoroughly without adding any water. Check the flour to see if it can be used to make puris. If the dough has visible cracks, add 1 teaspoon of water and knead it again.
    4. Mix in a little oil to keep the flour from drying out. Wrap the dough in a damp cloth and set aside for 15 minutes
    5. Heat the oil in a pan over high heat. Knead the dough again and cut it into equal pieces. Create balls from these balls. During this time, make sure to apply oil to your palms. The puris will swell as a result, but their moisture will not decrease.
    6. Apply a small amount of oil to a tree and take a whole vine. Reduce the flame to medium if the oil is hot enough.
    7. Place the puris in hot oil and fry them until golden. The potato puris are done.
