Black-eyed Peas Salsa; also great as a salad!
Ingredients
- 4 cups Cooked And Cooled Black-eyed Peas
- 2 whole Scallions, Diced
- 2 whole Bell Peppers, Stem And Seeds Removed, Diced
- 1 whole Red Onion, Diced
- 2 whole Limes, Juiced
- 3 Tablespoons Rice Vinegar
- Sea Salt, to taste
- Freshly Ground Pepper, to taste
Preparation
Place all of the ingredients in a bowl, toss and serve. Season with sea salt and freshly ground pepper.
