An easy, make-ahead meal for breakfast, lunch or dinner!
Ingredients
- 4 slices Bacon, Chopped, Cooked
- 1 cup Cooked Broccoli
- 1 whole Scallion, Chopped
- 1 whole Wheat Pie Crust
- 4 whole Eggs
- 1 cup Milk (1%)
- 1 cup Shredded Cheddar Cheese, Divided
- Salt And Pepper, to taste
- Fresh, Chopped Parsley, For Garnish (optional)
Preparation
1. Preheat oven to 375ºF. Cook bacon in a saute pan until crisp. 2. Remove from pan and set aside.
3. Saute broccoli and scallions in the same pan.
3. Place bacon, scallions and broccoli in the pie crust.
4. In a bowl mix together eggs, milk , 1/2 cup of cheese, salt and pepper.
5. Pour egg mixture over bacon and broccoli.
6. Add the remaining 1/2 cup cheese on top. Add more fresh scallions if you like.
7. Place quiche on a baking sheet and place in the middle rack of the oven.
8. Bake for 40-60 minutes until a knife inserted near the center comes out clean. Let stand 10 minutes before slicing. Garnish with fresh chopped parsley, if desired.
