A wonderful breakfast or brunch for two on a weekend!
Ingredients
- 2 whole Bagels (any Type You Like, We Love Onion Bagels) Sliced In Half
- 3 whole Large Eggs, Beaten
- 1 Tablespoon Light Cream Or Half-and-Half
- ½ teaspoons Black Pepper
- 2 Tablespoons Sweet Cream Butter
- 4 slices Sharp Cheddar Cheese, Or Your Favorite Cheese
- 4 slices Ripe Tomato, Sliced Thick
- 2 Tablespoons Panko Or Seasoned Bread Crumbs
- Salt And Pepper, to taste
Preparation
Preheat oven to 425 F.
Lightly toast bagel halves in the toaster or using your preferred method (just a few minutes, until golden). Set aside.
In a bowl add eggs, cream and pepper and whisk well. In a frying pan, melt butter on medium heat. Once melted, soft scramble the egg mixture. When done to your liking, set aside.
In an 8″ x 8″ baking dish place the toasted bagels in a single layer. Add one slice of cheese to the top of each half. Scoop soft scrambled eggs on top equally dividing among the bagel halves. Add a thick slice of tomato to each, sprinkle each with panko or seasoned breadcrumbs. Place in the oven on the middle rack and bake for 5-6 minutes.
Remove from oven and plate. We love these with a side dish of melon. Scrumptious. Enjoy!
