Baked avocado fries!
Ingredients
- 3 whole Ripe Avocados, Peeled, Pit Removed And Cut Into 1/2 Inch Wedges
- ⅓ cups Flour
- 1 teaspoon Chipotle Powder
- 2 whole Eggs, Beaten
- 1 cup Panko Bread Crumbs
- 1 dash Olive Oil Spray
Preparation
Preheat the oven to 450 F.
Make three bowls. One with flour and chipotle powder, one with beaten eggs, and one with panko breadcrumbs.
Dip the avocado slices in flour until covered and shake off excess. Dip in the eggs and then dip in the panko to coat. Yep, your hands will be a mess!
Place the avocados in a single layer on a baking sheet and spray generously with a cooking spray.
Bake for 10-15 minutes until crispy and light brown. Serve warm with your preferred dipping sauce. See my recipe for chili and garlic aioli dip on the related blog link. Enjoy!
