Baked Egg and Sausage Boats

Ingredients

  • 2 whole Wheat Submarine Sandwich Rolls
  • 4 whole Eggs
  • ⅓ cups 1% Milk
  • 1 whole Chicken Sausage Link, Cooked And Diced
  • 6 whole Crimini Mushrooms, Diced
  • 3 ounces, weight Smoked Mozzarella, Grated
  • 2 whole Green Onions, Thinly Sliced
  • Salt And Pepper, to taste

Preparation

Preheat oven to 400 F. Cut a deep “V” through the tops of each roll and remove the innards of the bread, leaving the bread looking like a bowl. Set aside.

Place the eggs and milk into a mixing bowl and lightly beat them together with a fork. Beat in the remaining ingredients, lightly seasoning the mixture with salt and pepper.

Divide the egg mixture between the two submarine rolls and place the rolls onto a baking sheet. Bake for 25 to 30 minutes or until golden brown, puffed and set in the center. Allow to cool for about 5 minutes, cut and serve.
