Roasted taters/onions, shredded chicken slathered in your favorite bbq sauce, melty cheese and avocados. Simple, unique, amazing.
Ingredients
- 4 whole Small Red Or Gold Potatoes
- ¼ whole Red Onion, Sliced Thin
- 2 Tablespoons Olive Oil
- Salt And Pepper, to taste
- 1 Tablespoon Butter, Or As Needed
- 2 whole Large Tortillas
- 1 cup Shredded Rotisserie Chicken
- 1 whole Small Avocado, Diced
- ⅔ cups Shredded Mexican Cheese Blend
- ½ cups BBQ Sauce
Preparation
Roast potatoes and onions with olive oil, salt and pepper at 400˚F for 30 minutes.
When ready to make the burritos, line up ingredients and start a large nonstick pan over medium-high heat. Put a pat of butter in the pan, swirl it around, then place tortilla in the pan. Cook for about 3 minutes and flip. Start adding half of the fillings while the other side cooks. After 3 minutes, remove from pan, fold or wrap and heat in pan again over low heat to ensure cheese is melted, about 2 minutes on each side should do it. Repeat with remaining tortilla and remaining fillings.
