Description
Simple and light Black Bean and Avocado Salad. Makes a great dip, side dish or just eat it straight out of the bowl!
Ingredients
- 2 whole Avocados, Diced
- ½ Lime, Juiced
- 1 whole Medium Tomato
- ⅓ cups Rinsed And Drained Black Beans
- ¼ cups Chopped Yellow Onion
- ¼ cups Chopped Cilantro
- ¼ teaspoons White Pepper
- ¼ teaspoons Garlic Salt
- ⅓ cups Queso Fresco, Divided
Preparation
Add avocados to a bowl. Squeeze lime juice over and very gently stir.
Add tomato, black beans, onion, cilantro, pepper, salt and ¼ cup queso fresco. Stir very carefully to avoid mashing up avocados; leave them chunky.
Sprinkle remaining queso fresco on top. Serve immediately.
