Description
Spinach and eggs are a nutritional powerhouse! This mild version is great for you or your children every morning, and perfect for a green holiday (St. Patrick’s Day!).
Ingredients
- 3 whole Eggs
- 1 Handful Fresh, Baby Spinach
- Sea Salt, to taste
- Raw Goat Cheese (or Dairy-free Alternative), To Taste
Preparation
Preheat oven to 375ºF.
Blend eggs with a handful of spinach in your blender until smooth. Pour mixture into a small pan and cook in oven for approximately 10 minutes, or until edges start to pull away from pan. Sprinkle with sea salt and some raw goat cheese. Fold.
Put omelette back in oven for 2–3 minutes to set. Enjoy!
