Description
Brown rice flour pancakes made with coconut oil and completely gluten-free. Delicious and light as a crepe!
Ingredients
- 2 cups Brown Rice Flour
- 3 teaspoons Baking Powder
- ¼ teaspoons Sea Salt
- 1-½ cup Tap Water
- 2 whole Eggs
- 2 Tablespoons Coconut Oil, Melted
- 2 Tablespoons Unsweetened Applesauce
- ½ teaspoons Vanilla Or Almond Extract
Preparation
Combine dry ingredients (brown rice flour, baking powder, sea salt) in a bowl. Mix. In a separate bowl, combine wet ingredients (water, eggs, oil, applesauce, extract) and mix.
Slowly add the wet ingredients to the dry ingredients.
Heat either a nonstick pan or a regular skillet that has been sprayed or oiled, until very hot. Drop batter by spoonfuls onto skillet. Cook on both sides until pancakes are golden brown.
