Description
An amazingly delicious cherry cake. It’s moist, flavorful and low in calories.
Ingredients
- 3 whole Eggs
- ¾ ounces, weight Coconut Oil
- 1 teaspoon Vanilla Essence
- 1 Tablespoon Rum
- 5-⅓ ounces, weight Spelt Flour
- 1 teaspoon Baking Powder
- 1 Tablespoon Stevia Sugar
- 5-⅓ ounces, weight Pitted Fresh Cherries
Preparation
1. Preheat the oven to 180 C. Lightly beat the eggs in a medium sized bowl then add the oil, vanilla and rum and gently mix.
2. Add dry ingredients (flour, baking powder and sugar) into wet and mix until you get a creamy texture.
3. Pour the dough into a baking tray (put baking paper in it first; I used a 30×20 cm tray).
4. Add cherries on the top.
5. Bake for 25-30 minutes at 180 C.
