Chia Pudding with Mango and Vanilla.
Ingredients
- 1 cup Frozen Mango Chunks
- ¼ cups Chia Seeds
- 1 cup Milk (your Favorite One)
- ½ teaspoons Vanilla Bean Paste (or Other Vanilla Essence Or Beans From Vanilla Pod)
Preparation
Note the listed cook time is actually refrigeration time.
Blend the mango in a blender until smooth and pour into a glass.
In a small bowl or cup, add chia seeds to the milk and stir for 4-5 minutes until it becomes a thick pudding. Add vanilla bean paste and stir.
Pour the chia mixture on top of the mango sauce and cover. Put it in the fridge for at least 4 hours or overnight. (If you make several portions, make sure to cover and refrigerate it and it will last for up to 4 days.)
Serve with fresh fruit or chopped nuts. Enjoy!
