Description

These chocolate and ginger cookies are great with a cup of coffee of a cup of tea. With the amount of ground ginger in them, they do have a bit of a kick as they go down, so if that is not for you then reduce the amount of the ground ginger. I absolutely love chocolate and ginger as a flavour combination and for me, these chocolate and ginger cookies are perfect.

Ingredients

  • 195 grams Plain Flour
  • ¼ teaspoons Salt
  • 100 grams Caster Sugar
  • 30 grams Cocoa Powder
  • 3 teaspoons Ground Ginger
  • ½ teaspoons Ground Cloves
  • 2 teaspoons Baking Powder
  • 2 teaspoons Bicarbonate Of Soda Or Baking Soda
  • 100 grams Diced, Unsalted Butter
  • 4 Tablespoons Golden Syrup

Preparation

1. Preheat oven to 200ºC (390ºF) and prepare 2 large baking trays.

2. Put flour, salt, sugar, cocoa powder, ground ginger, ground cloves, baking powder and bicarbonate of soda (baking soda) in a food processor. Add butter and blitz until it resembles bread crumbs. Transfer to a bowl.

3. Gently warm golden syrup in a pan, then add to mixture in bowl and stir until a dough is formed.

4. Divide dough into 16 small balls (walnut-shaped) and place at least 2cm (about 1 inch) apart on the baking trays and then flatten slightly.

5. Bake for 8–10 minutes. Cool on the trays before transferring to a wire rack.
