A sugar cookie recipe using all-natural coconut sugar. So nutty, spicy and delicious!
Ingredients
- 6 Tablespoons Unsalted Butter, At Room Temperature
- ½ cups + 2 Tablespoons Coconut Sugar
- 1 whole Large Egg
- ½ teaspoons Vanilla Extract
- 1 cup All-purpose Flour
- ¼ teaspoons Baking Soda
- 1 teaspoon Salt
Preparation
Preheat the oven to 375 F and line a baking sheet with parchment paper.
In a medium bowl, beat together the butter, coconut sugar, egg, and vanilla. Sprinkle the flour, baking soda and salt on top, and beat until combined.
Scoop generous tablespoonfuls of the dough onto the prepared baking sheet, and bake for 8-10 minutes, or until the tops of the cookies look dry. Remove from oven.
Let cookies cool on the pan for 1 minute, then move to a cooling rack to cool completely. Serve immediately, or keep covered in a storage container so they stay soft.
