This is the perfect way to use up leftover corned beef and potatoes. Make it and you’ll make your family very happy.
Ingredients
- 1 Tablespoon Vegetable Oil
- 1 cup Chopped Leftover Corned Beef
- 1 cup Chopped Leftover Cooked Red Potatoes
- 1 whole Egg, Cooked The Way You Like It
Preparation
Heat a cast iron skillet over medium-high heat. Add oil and swirl around the pan; add corned beef and potatoes and toss to coat with oil. Press into a single layer and allow it to brown well on the bottom, then stir and repeat until the potatoes have developed lots of crispy edges. Plate it and top with a perfectly cooked egg.
