A light and easy snack. Perfect for a summer day. In one hand a crostini in the other hand a gin and tonic.
Ingredients
- 1 Tablespoon Olive Oil
- 4 slices Ciabatta
- ½ Cucumber
- 2 Tablespoons Gin (or More)
- 3 Tablespoons Butter Milk
- ½ Ripe Avocado, Peeled And Pitted
- 1 Lime
- 1 Spring Onion
- 1 Tablespoon Chopped Fresh Cilantro
- 125 grams Fresh Salmon
- Salt And Pepper, to taste
- Cayenne Pepper To Taste
- Fresh Cress (watercress Or Preferred Type, For Garnish)
Preparation
Preheat oven to 250°C and put your ciabatta slices onto a baking pan. Spread olive oil over the bread slices and toast them in your oven at 250°C just until golden and toasted. Remove from oven and turn oven off.
Peel the cucumber and remove the seeds. Cut the pulp into small cubes, put them into a bowl and stir with half of the gin and the buttermilk. Add salt and pepper to taste.
Cut the avocado into cubes, put it into a small bowl and add some lime juice. Add salt, pepper and cayenne pepper to taste.
Cut the spring onion into fine rings and put it into a bowl with the chopped cilantro. Cut salmon into small cubes, put it into the same bowl and mix everything together with the remaining gin (you can use more if you want), salt, pepper and lime juice. Keep in the fridge until the time you want to eat it.
Put some avocado and salmon on the toasted bread. Baste with cucumber and buttermilk and garnish with cress.
