These cookies satisfy your cravings for sweet and salty in one small bite. With the combination of cocoa and dark chocolate chips, it is just the right amount of chocolate, and the texture of the coconut adds some chewiness. Ingredients
- 1 cup Refined Coconut Oil, Melted
- 2 whole Large Eggs
- 1 teaspoon Vanilla Extract
- ¾ cups White Sugar
- ¾ cups Brown Sugar
- 1 teaspoon Salt
- 2-¼ cups Unbleached All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- ½ cups Dark Chocolate Chips
- ¼ cups Unsweetened Cocoa
- 1 cup Shredded Coconut
- 36 sticks Pretzel Sticks
Preparation
Preheat oven to 350ºF. Prepare baking sheets with Silpat or parchment paper.
In a stand mixer bowl or in a separate bowl (if using a handheld mixer), combine all wet ingredients (coconut oil, eggs, vanilla, sugars) and blend.
In a separate bowl, combine all dry ingredients (flour, baking powder, baking soda, chocolate chips, cocoa, shredded coconut). Once combined, add to wet ingredients while mixing to combine.
Spoon cookie onto prepared baking sheets using a cookie scoop or small spoon. Slightly flatten and add ½ pretzel stick to each cookie.
Bake 9 minutes. Makes 6 dozen cookies.
