Description

Fast, fresh hummus made with edamame and pistachios—no chickpeas. So fresh and delicious!

Ingredients

  • 9 ounces, weight Shelled Edamame
  • ¾ cups Shelled Pistachios
  • 3 cloves Garlic, Minced
  • 2 Tablespoons Tahini
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Flat Leaf Parsley
  • 1-½ Tablespoon Olive Oil
  • 1 Tablespoon Lemon Zest
  • ½ teaspoons Ground Sea Salt
  • ½ teaspoons Coriander

Preparation

Add all ingredients to a food processor. Process on high until blended smooth. Mixture will form into a ball.

Serve with vegetables, pita bread, or pretzels.
