Fast, fresh hummus made with edamame and pistachios—no chickpeas. So fresh and delicious!
Ingredients
- 9 ounces, weight Shelled Edamame
- ¾ cups Shelled Pistachios
- 3 cloves Garlic, Minced
- 2 Tablespoons Tahini
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Flat Leaf Parsley
- 1-½ Tablespoon Olive Oil
- 1 Tablespoon Lemon Zest
- ½ teaspoons Ground Sea Salt
- ½ teaspoons Coriander
Preparation
Add all ingredients to a food processor. Process on high until blended smooth. Mixture will form into a ball.
Serve with vegetables, pita bread, or pretzels.
