Einkorn Fudge Brownies

Description

Fudge-like brownies made with all-purpose Einkorn flour, butter and home-rendered pastured lard.

Ingredients

  • ⅔ cups All-purpose Einkorn Flour
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Kosher Salt
  • ¼ cups European-style Butter
  • ¼ cups Pastured Lard
  • 3 ounces, weight Unsweetened Chocolate
  • 1 cup Unrefined Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract

Preparation

Preheat oven to 350ºF. Grease a 7×11-inch baking pan; set aside. Add flour, baking soda, and salt to a small bowl and stir to combine; set aside.

Add butter, lard, and chocolate to a medium saucepan and melt over low heat, stirring all the while. Remove saucepan from heat to allow mixture to cool, about 10 minutes.

Pour chocolate mixture into a large bowl, add sugar, and mix until combined. Add eggs and vanilla and beat until smooth. Add dry ingredients and mix just until flour is moistened then spread batter evenly into the greased baking pan.

Bake brownies for 27 minutes, or until a toothpick poked in the center comes out with a few crumbs. Place brownies onto a cooling rack and allow to cool completely before slicing.
