Description
A perfect addition to a holiday appetizer spread.
Ingredients
- 9 ounces, weight Dried Figs
- 1-½ cup Water
- 1 whole Baguette
- Olive Oil (or Cooking Spray)
- 2 Tablespoons Honey
- 5 ounces, weight Goat Cheese
Preparation
1. Remove stems and cut dried figs into quarters.
2. In a small saucepan, bring figs and water to a boil. Reduce to a simmer and cover. Cook for 20 minutes, until figs are soft.
3. Meanwhile, preheat broiler to low.
4. Slice baguette into thin slices.
5. Place bread slices on a baking sheet and spray or lightly brush with oil.
6. Broil for 4–5 minutes until crisp and set aside.
7. Return to figs. Using a slotted spoon, transfer figs to a food processor. Add honey and half of cooking water. Process until smooth, gradually adding more cooking water until desired consistency is reached (I had about ¼ cup remaining).
8. Serve bread and fig jam with goat cheese.
