Description
Grilled pizzas have a crisper crust than baked versions and have a great smoky flavor. This one with figs, pancetta and Gorgonzola is a feast of flavors.
Ingredients
- 1 pound Pizza Dough, Divided Into Two Equal Parts And Rolled Out To 6-inches
- ½ cups Pizza Sauce
- ½ cups Fresh Sliced Mozzarella
- 1 whole Large Tomato, Sliced
- 2 ounces, weight Sliced Pancetta
- 2 Tablespoons Gorgonzola Cheese
- 1 cup Baby Spinach
- 6 whole Figs, Chopped
Preparation
Light grill and heat to low heat.
Place the sauce and toppings near the grill. Carefully place crusts on grill. Cook until golden on the bottom, about 2 minutes. Flip the crusts. Quickly top with sauce, mozzarella, tomato slices, pancetta, and Gorgonzola. Cover grill. Cook until the bottom of the crust is browned and cheese is bubbling, about 3 minutes. Top with spinach and figs. Cover grill. Cook until spinach wilts, about 2 minutes. Remove pizza from grill, drizzle with warm balsamic glaze and serve.
