Description
Don’t throw away overripe tomatoes! Instead, chop them up and make them into salsa! Salsa is the easiest thing to make and it is a great way to use that produce you might have just thrown away.
Ingredients
- 2 Medium Tomatoes, Over-ripened, Soft
- 2 cloves Garlic
- 1 Jalapeño, Seeded
- ½ cups Mango, Roughly Chopped
- 1 ounce, fluid Lime Juice (1/2 Of A Lime)
- ¼ teaspoons Salt
Preparation
Finely chop the tomatoes and place into a non-reactive bowl, preferably glass. Add all of the juices from the tomato as well.
Finely chop the garlic and jalapeño and add to the tomatoes. Roughly chop the mango and add it to the tomatoes as well.
Squeeze the lime juice over mixture and add salt. Stir to combine.
Allow to marinate in the refrigerator for a minimum of 4 hours.
Serve with tortilla chips!
