Loaded BBQ Chicken Nachos

Description

Nachos piled high with BBQ rotisserie chicken, cheddar cheese, onion, olives and tons more!

Ingredients

  • 1 bag (9 Oz. Size) Tortilla Chips
  • 2 cups Shredded Rotisserie Chicken
  • ½ cups Your Favorite BBQ Sauce, More Or Less As Desired
  • 3 cups Extra-Sharp Cheddar Cheese, Shredded
  • 4 sprigs Scallions, Chopped
  • ¼ whole Red Onion, Chopped
  • 2  Tomatoes, Sliced In Half, Squeezed To Remove Juice And Seeds Then Chopped
  • 1  Jalapeno, Seeded And Chopped
  • 2-¼ ounces, weight Sliced Black Olives, Drained
  • Extras, For Serving: Sour Cream, Salsa And/or Guacamole

Preparation

Preheat oven to 375 F. Line a baking sheet with foil.

Spread half of the tortilla chips on the baking sheet. Combine the chicken with desired amount of BBQ sauce. Cover chips with half of the toppings: cheese, scallions, red onion, BBQ chicken, tomato, jalapeno and black olives.

Then layer on the remaining tortilla chips and spread the remaining toppings over the top. Bake for 10 minutes or until the cheese is thoroughly melted.

Serve with your favorite sides. I recommend sour cream, salsa and/or guacamole.
