Mediterranean Chicken Tostadas

Description

These Mediterranean Chicken Tostadas might be the easiest dinner idea yet. Packed with veggies, white meat chicken, feta cheese and Greek yogurt, I’m not sure dinner gets much healthier (or yummier) than this!

Ingredients

  • 2 whole Whole Wheat Pitas
  • ½ cups Hummus
  • 1 cup Lettuce Chopped
  • ¼ cups Cucumbers, Diced
  • ¼ cups Black Olives Sliced
  • 1 whole Tomato, Diced
  • ½ cups Shredded Rotisserie Chicken
  • ¼ cups Feta Cheese
  • 2 Tablespoons Greek Yogurt
  • Chopped Parsley, For Garnish (optional)
  • Paprika, As Desired For Serving
  • 2 teaspoons Olive Oil
  • 2 teaspoons Lemon Juice

Preparation

Arrange pitas on serving plates and smear ¼ cup of hummus on each. Then sprinkle lettuce, cucumbers, olives and tomatoes over the hummus. Next, lay some chicken and feta cheese on top of veggies. Top each pita with about a tablespoon of Greek yogurt and chopped parsley. Sprinkle with paprika. Drizzle about a teaspoon of olive oil and lemon juice on each pita. Enjoy!
