Description

Dinner is so easy with this One-Pan Parmesan Ranch Chicken with Broccoli! This no-mess, 35-minute meal is perfect for busy nights!

Ingredients

  • FOR THE BROCCOLI:
  • 4 cups Fresh Broccoli Cut Into Bite Sized Pieces
  • 3 Tablespoons Olive Oil
  • ⅛ teaspoons Garlic Salt, Or More To Taste
  • FOR THE CHICKEN:
  • 4 whole Chicken Breasts, Beaten To The Same Thickness
  • ¼ teaspoons Garlic Salt
  • 2 Tablespoons Ranch Dressing
  • ½ cups Panko
  • ⅓ cups Shredded Parmesan Cheese

Preparation

Preheat oven to 400ºF. Line a baking sheet with parchment paper.

Place broccoli on pan and push it to each side, leaving the center open for the chicken. Drizzle olive oil over broccoli and sprinkle with ⅛ to ¼ teaspoon garlic salt.

Place chicken breasts in the center of the pan and sprinkle over garlic salt. Using a basting brush, brush ranch dressing onto the top and sides of each chicken breast. Top each chicken breast with panko and Parmesan cheese. Spray each cutlet with cooking spray, as this allows it to brown in the oven.

Place in the oven and bake for 20 minutes or until chicken is cooked through (when the juices run clear) and top has browned slightly.

Note: I pounded my chicken breasts relatively thinly for this meal. If yours are thicker, you may need to cook the chicken for more than 20 minutes.
