This is a wonderful recipe that my grandma made all the time! I haven’t seen this anywhere before! This is to honor my Grandma, Josie Marie Farley. I hope you like this recipe! You’ll be coming back for seconds and thirds!
Ingredients
- 1 box (15 To 16 Oz. Size) Yellow Cake Mix
- Additional Required Ingredients Specified On Cake Box (typically Water, Eggs And Oil)
- 20 ounces, weight Canned Crushed Pineapple
- 1 cup Sugar
- 1 package (8 Oz. Size) Cream Cheese
- 1 package (3.4 Oz. Size) Instant Vanilla Pudding
- 1-½ cup Milk
- 1 package (8 Oz. Size) Cool Whip
- ¾ cups Shredded Coconut
- ½ cups Chopped Pecans
Preparation
Bake cake as directed in a 13 by 9 or a 13 1/2 by 8 1/2 glass dish.
Combine pineapple (use all the juice) and sugar in a saucepan and bring to a boil. Remove from heat. Spread this over the cake when cake is hot (use all the juice). Allow to cool.
When cake has cooled, mix cream cheese, pudding mix and milk until smooth and spreadable. Spread over pineapple layer. Frost with Cool Whip and sprinkle with coconut and pecans! Hope you enjoy! This is always a hit!
