These spiced pancakes are a seasonal favorite. A quick and easy way to start a blustery day!
Ingredients
- 1-½ cup Flour
- 2 Tablespoons Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- ½ teaspoons Salt
- 1-¼ cup Milk
- 1 cup Pumpkin Purée
- 3 Tablespoons Butter, Melted
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- Maple Syrup And Powdered Sugar, To Serve
Preparation
In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, whisk the milk, pumpkin, butter, vanilla, and egg together.
Add the wet mixture to the dry and stir until completely combined.
Heat a nonstick skillet to medium-high (350°F) and butter skillet lightly. Spoon 1/4 cup batter and spread batter thinly to about a 6″ circle. Cook until golden brown, about 3 minutes, then flip and cook other side for 3 minutes.
Serve warm with maple syrup and powdered sugar.
Makes 10 pancakes.
