Description
Refreshing sweet drink that is both cooling and nutritious.
Ingredients
- 1 pound Red Sugarcane, Chopped Foot-long Into Sizes That Will Fit In Your Pot
- 8 ounces, weight Water Chestnut, Root And Stem Ends Removed (Peel If Desired)
- 2 ounces, weight (approximate) Rock Sugar
- 6 cups Water
Preparation
Give sugarcane and water chestnuts a good scrub and wash.
Place everything in a large stock pot and bring to a boil. Then turn heat down to a simmer for 2 hours.
Then remove the pot from the heat. Set it aside and allow to cool. You can strain the liquid into a pitcher through a bowl if there is any sediment that you want to remove.
Serve warm or chilled.
* You can most definitely use green sugarcane for this. There is a slight difference in flavor but either would be delicious.
