Ingredients

  • 1 whole Red Bell Pepper
  • 15 ounces, weight Canned Garbanzo Beans (chickpeas)
  • 2 cloves Garlic, Minced
  • 3 Tablespoons Lemon Juice
  • ¼ cups Olive Oil
  • 1 Tablespoon Cumin
  • ¼ Tablespoons Cayenne Pepper
  • Salt To Taste
  • Olive Oil For Topping

Preparation

Place red pepper onto a baking sheet that has been sprayed with nonstick spray. Bake at 450ºF for 30 minutes or until all the sides have blackened slightly. Let set and cool. Then remove the skin, stem, and seeds. Dice the pepper.

Drain and rinse the garbanzo beans.

In a medium-sized bowl, mix together the diced pepper, garlic, lemon juice, olive oil, garbanzo beans, cumin, cayenne, and salt. Blend until well combined and creamy. Blend using a hand blender or use a blender if available.

Top with olive oil and serve!
