Ingredients
- 6 slices Bacon
- 2 Tablespoons Olive Oil
- 1 Yellow Onion, Diced
- 1 clove Garlic, Minced
- 2 teaspoons Fresh Thyme, Chopped
- Salt And Pepper, to taste
- 8 ounces, weight Cream Cheese
- ½ cups Shredded Asiago (or Parmesan Or Cheddar) Cheese
- 1 Tablespoon Worcestershire Sauce
- 4 ounces, fluid Beer (recommend Wheat Or Pale Ale)
- Optional Additions: Jalapeno, Hot Sauce (to Taste)
Preparation
In a large skillet over medium heat, cook bacon, flipping and turning so that it browns evenly. Cook to desired crispness. Remove bacon once cooked, and let it drain on a paper towel before chopping into small pieces.
In a separate skillet, add olive oil. Heat over medium heat, toss in chopped onion and garlic, and cook until browned, about 5-7 minutes, stirring occasionally.
Add the crumbled bacon (reserve some for garnish if desired), onions and garlic into a crockpot. Toss in all remaining ingredients, season with salt and pepper and cook on low until melted. Cook time may take about 45 minutes. Top with leftover bacon crumbles. Recommend serving warm.
