Description
A not-too-sweet yet fruity dessert that is dairy-free, gluten-free with no added sugar. This is also great as a breakfast dish. If you prefer it sweeter, add a bit of raw honey or maple syrup to the berries with the orange juice.
Ingredients
- 1 quart Strawberries, Quartered
- 1 pint Blackberries
- ½ cups Fresh Orange Juice
- 1 teaspoon Vanilla Extract
- 1-½ Tablespoon Cold Ghee
- ½ cups Almond Meal
- 1 pinch Sea Salt
- ½ teaspoons Cinnamon
- ½ cups Chopped Raw Almonds
Preparation
Preheat oven to 350ºF.
Place berries in a bowl, add juice and vanilla, and stir gently to mix. Evenly place berries and juice in small (4- to 5-ounce) ramekins. Roast for 20 minutes.
Meanwhile prepare topping. In a mini food processor, place cold ghee, almond meal, salt and cinnamon. Pulse 5 or 6 times. Add chopped nuts and pulse 2 or 3 times.
Remove roasted berries from oven and place a heaping tablespoonful of topping onto each ramekin. Return to oven and roast 10–15 minutes more or until topping is lightly browned.
Allow to cool slightly before serving.
