These strawberry crepes with goat cheese and basil are sure to delight your taste buds! They are perfect for a brunch party or just a weeknight dessert!
Ingredients
- 1 Large Egg
- ½ cups Milk
- ¼ cups Water
- 1 Tablespoon Butter, Melted
- ½ Tablespoons Vanilla Extract
- ½ cups All-purpose Flour
- ¾ Tablespoons Sugar
- ⅛ teaspoons Salt
- ½ cups Red Pepper Jelly
- 6 Strawberries
- 2-½ ounces, weight Goat Cheese
- Fresh Basil, To Taste
Preparation
Mix eggs, milk, water, butter, and vanilla extract together. Add flour, sugar, and salt.
Preheat a small nonstick skillet to medium heat. Add ⅓ crepe batter mix to heated skillet. As quickly as possible, rotate skillet to thin out crepe and make it larger in size. Each crepe should be cooked about 1 minute per side. Repeat until there is no batter left over.
Spread red pepper jelly on crepe and top with strawberries, goat cheese, and basil to taste. Fold in half or quarters, depending on your preference.
