    Description

    A mild fresh salsa with corn and beans.

    Ingredients

    • 6 cups Chopped Tomatoes
    • 1 clove Garlic, Minced
    • 1 can (15 Oz. Size) Black Beans, Rinsed
    • 1 can (15 Oz. Size) Kernel Corn, Drained
    • 1 whole Lime, Squeezed For Juice
    • 1 whole Small Onion, Chopped
    • 1 whole Green Pepper, Chopped
    • 1 Tablespoon Dried Cilantro (or More, If Fresh)
    • 2 whole Jalapeno Peppers, Minced (optional)
    • FOR THE DRESSING:
    • ½ cups Zesty Italian Dressing
    • 1 Tablespoon Salt
    • ¼ cups Sugar

    Preparation

    Stir together the dressing ingredients and pour over all the chopped veggies. Stir everything together and let sit 2 hours.

    Doesn’t keep long in the fridge, only 1-2 days.

    To replace the zesty Italian dressing and fresh jalapenos, I add 1 cup pickled jalapenos and juice. (See my Pickled Jalapenos recipe in my recipe box.)
