Description
These fluffy, lightly sweet pancakes are incredibly tasty with no added fat! Made with white whole wheat flour, you can barely tell they’re a totally whole-grain, perfectly wholesome start to your morning.
Ingredients
- 1 cup White Whole Wheat Flour
- 1 teaspoon Baking Powder
- ½ teaspoons Baking Soda
- ½ teaspoons Salt
- 1 teaspoon Cinnamon
- 1 Large Egg
- 1-½ Tablespoon Honey, Warmed Until Runny If Solidified
- 1 cup Buttermilk (see Note)
- 1 teaspoon Vanilla Extract
- 1 cup Finely Chopped Apples (I Used A Mix Of Gala And Granny Smith. You Can Use Up To 1.5 Cups Of Apple)
Preparation
In a large bowl whisk together flour, baking powder, baking soda, salt and cinnamon. In a small bowl, whisk together the egg, honey, buttermilk and vanilla. Fold in apples. Stir the apple mixture into the dry ingredients until just incorporated. Let the batter rest while you preheat a lightly greased pan over medium heat.
Spoon batter ¼ cup at a time into the preheated pan. Cook for about two minutes on each side, until pancakes are golden on both sides.

Note: You can make your own buttermilk by adding a tablespoon of apple cider vinegar into a one cup measure, then add milk to the one cup line. Let it sit for a minute or two then use in place of the buttermilk.
