Wholemeal Pie Dough


This Wholemeal Double Crust Pie Crust is delicious. The key is not to over-knead the dough; there should be butter lumps for it to resemble puff pastry.

Ingredients
- 1 ½ sticks (6 ounces) cold butter, cut into ¼-inch pieces
- 1¾ cups plus two tablespoons whole wheat pastry flour
- 1 pinch of salt
- Frozen water
Instructions
- Mix in the butter with your fingertips until the mixture resembles coarse breadcrumbs with a few clumps of butter.
- Make a hole in the center and fill it with 2 tablespoons of ice water. Mix with your hands or a knife until it forms a dough, then add more water, one tablespoon at a time, if necessary. Form the dough into a ball with your hands, being careful not to overwork it. It should not be too sticky and should easily come out of the container.
