Description
Easy pasta dish with 5 main ingredients and it takes only 20 minutes to make. Perfect for a quick weeknight dinner.
Ingredients
- 5 ounces, weight Spaghetti Noodles
- 2 Medium Eggs
- ¾ cups Grated Parmesan
- 1 teaspoon Olive Oil
- 2 cloves Garlic, Minced
- 4 slices Bacon, Cooked And Chopped
- 2 Tablespoons Chopped Fresh Parsley
- Salt And Pepper, to taste
Preparation
Bring a large pot of water to a boil. Add a pinch of salt. Cook pasta according to the instructions on the package. When done, reserve ½ cup of pasta water then drain pasta and set it aside.
Meanwhile, whisk eggs in a small bowl then combine with Parmesan cheese. Set aside.
Heat the olive oil in a pot over medium heat. Add garlic and cook for 30 seconds to 1 minute, until fragrant. Add cooked bacon and pasta. Remove from heat. Working quickly, stir in pasta and egg/Parmesan mixture. Add some of the reserved pasta water if needed to moisten it a bit and stir to combine.
Season with salt and black pepper. Top with chopped parsley and additional Parmesan cheese, if desired. Serve immediately.
