Ingredients
- 8 ounces, weight Linguine
- 1 Tablespoon Vegetable Oil
- ½ whole Onion, Chopped
- 1 Tablespoon Minced Garlic
- 1 teaspoon Oregano
- 1 cup Cremini Mushrooms, Sliced
- ⅓ cups Basil Pesto
- ½ cups Pistachios
- ¼ cups Parmesan Cheese, For Garnish (optional)
Preparation
In a pot, cook linguine in boiling water for 5 minutes until al dente.
Heat oil on medium high in a skillet. Saute onion until golden and lower heat to medium. Add garlic, oregano, and mushrooms and cook for 5–6 minutes. Remove from heat.
Combine pasta, mushrooms, and pesto in the warm pot. In a mortar and pestle, grind pistachios and garnish pasta with desired amount of ground pistachios. Top with Parmesan if desired. Serve and enjoy!
