Apple-Almond-Cinnamon Breakfast Granola

Description

This is a delicious granola for topping yogurt, pancakes, waffles, desserts, and whatever else you like.

Ingredients

  • ½ cups Apple Jelly
  • 2 Tablespoons Pure Honey
  • 1 Tablespoon Cinnamon
  • Few Pinches Nutmeg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Raw Almonds, Chopped
  • 1 cup Oats

Preparation

Preheat oven to 300ºF.

Prepare a large rimmed baking sheet pan with your favorite cooking spray (I use Baker’s Joy). Set aside.

In a saucepan over medium heat, add apple jelly, honey, cinnamon, nutmeg, and vanilla. Stir to combine. Add almonds and stir gently. Remove from heat.

In a mixing bowl, add oats and everything in the sauce pan. Stir well to combine. Pour and spread out on prepared baking sheet pan. Place into oven and bake for 15 minutes. Stir mixture and bake an additional 15 minutes.

Allow to cool, gently break up granola, and place in an airtight container.

We love this over yogurt, or on top of pancakes or waffles. Enjoy!
