Have you had brown rice pasta yet? It is a serious game changer. It is incredibly healthy and easy to make. In honor of summer being just around the corner, I whipped up this Summer Veggie Brown Rice Pasta. This is a great recipe to make in bulk and eat throughout the week or serve to a large crowd.
Ingredients
- 2 cups Brown Rice Pasta
- ½ Zucchini
- ½ Yellow Squash
- 1 cup Broccoli
- ¼ cups Chopped Onions
- ¼ cups Red Peppers
- ½ cups Cauliflower
- 2 Tablespoons Olive Oil
- 1 Tablespoon Pesto Sauce
- 1 Tablespoon Basil Leaves
Preparation
Cooked brown rice pasta.
Sauté veggies and oil in a large skillet on low heat for 15 minutes. Mix pasta and veggies in a large bowl. Add pesto sauce and basil.
Eat up!
