Ingredients
- 28 ounces, fluid Potatoes (I Used Purple)
- 12 ounces, fluid Green Beans, Ends Trimmed
- 4 Tablespoons Olive Oil
- 2 teaspoons Dried Basil
- 2 teaspoons Dried Oregano
- Salt And Pepper, to taste
- 6 cloves Garlic, Minced And Divded
- ¼ cups Pesto, Homemade Or Prepared
- 4 Salmon Portions (fresh Or Frozen)
Preparation
Preheat oven to 400ºF.
Toss potatoes and green beans in olive oil, basil, oregano, salt and pepper, and 1 clove (minced) garlic. Spread in one layer on cookie sheet and bake for 15 minutes.
While veggies are cooking, place an even layer of remaining garlic and pesto on top of each salmon fillet. Place on a piece of foil and fold edges up around the salmon.
After veggies have cooked for 15 minutes, place foil packets on same cookie sheet, or a separate one if cookie sheet is not big enough. Bake until salmon is flaky, about 15 minutes. Enjoy!
