Description
An easy and super delicious gluten-free waffle made with protein powder and oat flour. They can be made ahead of time and frozen for a quick and healthy breakfast or snack anytime!
Ingredients
- 1 cup Cashew Milk
- 1 teaspoon Lemon Juice
- 1-¼ ounces, weight Protein Powder
- ½ teaspoons Baking Powder
- ¼ teaspoons Baking Soda
- ¼ cups Egg Whites
- 1 Tablespoon Maple Syrup
- ½ teaspoons Vanilla Extract
- 1 teaspoon Cinnamon
- 1-½ cup Oats
- 1 Tablespoon Applesauce
Preparation
Preheat waffle maker.
In a small bowl, combine milk and lemon juice and let stand 5–10 minutes until milk starts to curdle.
In a blender or food processor, add all other ingredients. When milk has curdled, add in milk. Blend until evenly mixed and the oats have broken down and become a flour.
Grease your waffle maker really well. Pour batter into waffle maker and cook according to machine instructions. Repeat with the rest of the batter, making sure to re-grease after each one.
Eat immediately or freeze for later use. If frozen, remove from freezer and place in toaster to reheat.
