Description

Apple Cake with Caramel Apple Butter.

Ingredients

  • 2  Eggs
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • ½ cups Canola Oil
  • 1 teaspoon Vanilla Extract
  • ½ cups Apple Butter Spread
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 2 cups Apples
  • FOR THE SAUCE:
  • 4 Tablespoons Unsalted Butter
  • 1 cup Dark Brown Sugar
  • ¼ cups Heavy Cream
  • ¼ cups Milk
  • ⅓ cups Apple Butter Spread
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350°F.

Add eggs, sugar, and brown sugar in a big bowl, and mix until well-incorporated. Add canola oil, vanilla extract, and apple butter, and mix well again.

In a different bowl, mix flour, baking soda, cinnamon, and salt. Combine the dry mixture to the wet mixture in batches and mix well.

Peel and dice apples and fold them into the batter. Pour batter into a greased bundt pan and bake at 350°F for 40–50 minutes, until an inserted toothpick comes out clean.

While cake cools, prepare the sauce. Add butter, brown sugar, cream, milk, and salt to a sauce pan, and stir until butter is melted and incorporated. Once sauce boils, reduce heat and let it bubble for 5–7 minutes while stirring. Remove sauce from heat, add apple butter, and mix well.

Once cake and sauce have had time to cool, pour sauce over the cake. Enjoy the cake warm, and refrigerate between servings.
