Ingredients
- 1 pound Whole Wheat Pasta Noodle Of Choice
- 2 Tablespoons Olive Oil
- 12 ounces, fluid Italian Chicken Sausage
- 1 head Broccoli Cut Into Florets
- 1 head Cauliflower, Cut Into Florets
- 1 Bell Pepper, Chopped
- 1 Medium Onion, Chopped
- 4 cloves Garlic, Minced
- 2 cups Fresh Spinach, Coarsely Chopped
- 1 cup Cherry Tomatoes, Halved
- ¼ cups Lemon Or Lime Juice
- ¼ cups Fresh Basil, Chopped
- Salt And Pepper, to taste
- Parmesan Cheese, For Topping
Preparation
Bring large pot of water to boil. Dump pasta of choice in boiling water, and cook according to package directions. Reserve ½ cup of boiling water. Drain pasta and set aside.
Heat olive oil in large skillet. Add sausage and cook in oil for 3–4 minutes. Add broccoli, cauliflower, bell pepper, onion, and garlic to skillet. Cook until vegetables are tender, 8–10 minutes.
Add spinach and tomatoes to skillet and cook for an additional 1–2 minutes.
Add pasta, reserved pasta water, lemon juice, basil to large bowl. Toss until well mixed. Add cooked vegetables and stir together until well mixed. Add salt and pepper to desired taste. Top with Parmesan cheese. Serve warm.
