Description

Piña Colada Chia Pudding feels indulgent but is nothing but good for you!

Ingredients

  • 1 cup Plain Greek Yogurt
  • 1 cup Light Coconut Milk
  • ¼ cups Chia Seeds
  • 1 teaspoon Agave Syprup
  • 1 teaspoon Vanilla Extract
  • ¾ cups Frozen Pineapple
  • ½ cups Pineapple Juice
  • 2 Tablespoons Unsweetened Coconut Flakes

Preparation

Whisk together Greek yogurt, coconut milk, chia seeds, agave syrup and vanilla extract in a medium-sized bowl or container until combined. Cover and refrigerate overnight.

Add frozen pineapple and pineapple juice to a food processor or high speed blender and puree until a smoothie-like consistency is reached.

To serve, divide chia pudding and pineapple mixture evenly in alternating layers. Top with shredded coconut.
