Description

When it comes to Fantasy Football, few foods are better than wings. Roll some smoke to get even more flavor, and you have the top-tier version!

Ingredients

  • ¾ cups Favorite Spice Rub
  • 12 pounds Chicken Wings

Preparation

Apply spice rub to wings the night before making. Place into fridge.

Prior to smoking, pull wings and let them rest for about 1 hour. Get smoker up to 250ºF. Allow to fully heat.

Place wings onto smoker. Flip after 1 hour. If you know your grill, you may want to switch locations of wings while flipping due to hot spots. Pull when internal temperature is 165ºF or about 2 hours.

In heavy-bottomed pan, fry for 1–2 minutes each side for extra crispiness. Toss in a small amount of extra spice rub. Finish with sauce if desired.

Notes:
• For crispier skin, fry or bake at 500ºF to finish. Toss in favorite sauce right after frying.
• When making rubs for chicken, I usually use 1 tablespoon of seasoning per pound of chicken.
