Description
This easy vegetable lo mein is exploding with flavor! I think of this as cheater lo mein because it’s packed with vegetables but you only have to chop one pepper and one onion. A super satisfying, healthy, and fast meal!
Ingredients
- FOR THE LO MEIN:
- 7 ounces, weight Lo Mein Noodles
- 5 whole Large Eggs, Beaten
- 2 Tablespoons Oil, Divided
- 1 whole Red Bell Pepper, Sliced
- 1 whole Yellow Onion, Sliced
- 1 pound Tri Color Coleslaw Mix
- Green Onions Or Cilantro, For Garnish (optional)
- FOR THE SAUCE:
- ½ cups Oyster Sauce
- ¼ cups Soy Sauce
- ¼ cups Rice Wine Vinegar
- 3 Tablespoons Honey
- 1 teaspoon Garlic Powder
- 2 teaspoons Powdered Ginger
- 1 Tablespoon Sesame Oil
Preparation
Start a pot of water boiling for noodles. In a small bowl, whisk eggs until well-beaten. In another small bowl mix sauce ingredients together.
Add lo mein noodles to the boiling water. Cook according to directions. Drain and set aside.
While lo mein noodles are cooking, heat a nonstick pan over medium-low heat. Spray with cooking spray and cook eggs until dry, not creamy. Remove eggs to a bowl. Wipe out pan if bits of egg remain.
Heat pan over medium-high heat. Add 1 tablespoon of oil and peppers and onions. Stir-fry peppers and onions for 2–3 minutes. Remove peppers and onions to a plate.
Add remaining 1 tablespoon of oil to the pan. Add coleslaw and stir-fry 1–2 minutes until slightly wilted. Add lo mein noodles, sauce, peppers, and onions. Toss to combine. Serve topped with green onions or cilantro if desired.
Tip: Food prep is important when stir-frying so do all the prep first. Don’t try to prep in the middle of cooking!
