Description
These are so filled with flavor and make for a quick and easy dinner. Enjoy on a weeknight or when you need to pull together a quick and easy meal for guests.
Ingredients
- 1 bunch Cilantro, Divided
- Fresh Basil, Sliced, For Topping (optional)
- 1 Tablespoon Olive Oil
- ½ whole Yellow Onion, Chopped
- 4 ounces, weight Shiitake Mushrooms, Sliced
- 1 pound Shrimp, Chopped Into Bite Size Pieces
- 3 cloves Garlic, Minced
- 1 Tablespoon Harissa Paste
- 2 Tablespoons Lite Soy Sauce
- 1 pinch Brown Sugar
- 1 bunch Green Onions, Sliced
- 1 head Lettuce (romaine, Butter, Boston)
- ¼ cups Chopped Cashews, For Topping (optional)
- 1 whole Lime
Preparation
Chop a few pieces of cilantro (leaves and stems!) and set aside. Slice additional cilantro leaves and combine with basil in a bowl. Set aside.
In a large pan, bring olive oil to medium heat. Saute onions and mushrooms until onions are translucent. Add shrimp and garlic, saute until mostly cooked through. Add harissa paste, soy sauce, and brown sugar. Cook until thickened and shrimp is cooked through, about 4–5 minutes.
Remove from heat and add chopped cilantro and 3 to 4 chopped green onions.
To assemble, plate lettuce leaves. Top with shrimp mixture, chopped cashews, the basil and cilantro mixture, green onion tops, and a squeeze of lime.
Note: Harissa is spicy! So if you like less spice, use less, or balance it with more soy sauce and brown sugar.
