Description

Here is a simple, quick, light and healthy breakfast. Pomegranate has been acknowledged as a superfood for some time now. An added bonus is that it has become more common in fruit and vegetable stores and good markets (when in season). With the addition of yogurt, crushed walnuts and honey, this simple dish ends up being a fancy treat.

Ingredients

  • 1 whole Pomegranate
  • 1 cup Yogurt, Thick Greek Or Turkish Style
  • ¼ cups Walnuts
  • 2 Tablespoons Honey

Preparation

Cut pomegranate in half and scoop out seeds with a small fork or spoon. Place in serving-size bowls. Hint: don’t wear white whilst doing this!

Put a large dollop of yogurt over the top of the pomegranate. Sprinkle walnuts on top of yogurt and drizzle a spoonful of honey to finish off.
