Cheddar Pepper Pimento Boats

Description

Roasted Mini Peppers filled with a creamy pimento and cheddar filling for a light healthy game day snack!

Ingredients

  • 11 whole Mini Peppers
  • ½ cups Extra Sharp Cheddar Shredded
  • 2 ounces, weight 1/3 Less Fat Cream Cheese
  • ½ cups Plain Fat Free Yogurt
  • 4 ounces, weight Jarred Diced Pimentos, Drained
  • 2 whole Green Onions, Chopped
  • 4 teaspoons Homemade Taco Seasoning Or Other Taco Seasoning
  • ½ teaspoons Garlic Salt
  • 5 sprigs Cilantro, Finely Chopped, For Garnish

Preparation

Rinse mini peppers well and slice lengthwise to create the boats. Remove seeds and place on a baking sheet. Place in a 400ºF oven for 15 minutes or until tender. Remove and set aside to cool.

Add cheeses, yogurt, pimentos, onions and seasoning to a mixing bowl and stir to combine.

Fill each mini pepper with the filling and sprinkle cilantro. Serve immediately or chill in the refrigerator, covered.
